Everybody loves pudding! Right?
Sun, Swings, and Pudding Snacks
Pudding always takes me back to the good old days of swings on the playground, with those lunch snacks of creamy sweet deliciousness packed in little containers with peel-back lids. Can’t you picture it? Your dirty sweaty kid hands peeling open and licking the pudding off the lid, before diving into the plastic cup.
This chia pudding has all of that creamy sweet deliciousness, but is also packed with super nourishing ingredients. You get a healthy serving of fat from the coconut milk, omega-3s from the chia seeds, and a whopping helping of juicy fresh fruit. The coconut cream is what really gives this pudding its extra creamy and light texture. (The one I use is Kara Coconut Cream.)
Strawberry chia pudding is a super-satisfying treat when you want something sweet but don’t want anything that is loaded down with sugar, and whatever else is in the box-o-instant-pudding mix.
After you realize how easy this is to make, you will wonder why you ever bothered with the other stuff! Your kids will even love it. I love the texture the chia seeds add to this pudding – the pudding is smooth and creamy, but then when you bite it there is the slightest bit of tiny crunchiness.
Not only is making this pudding really easy, you can also use this basic recipe and adapt it to so many different flavors. Some of my favorites are pumpkin, chocolate, and salted caramel, plus I am working on a lemon recipe. I can even envision key lime… oooh, or mango.

Strawberry Chia Pudding
- ⅔ cup chia seeds up to ¾ cup can be used
- 20 ounces fresh strawberries
- 13.5 ounce can of full fat coconut milk
- 6.8 ounce container of coconut cream Kara brand
- 1 lime zested
- juice from ½ of lime
- 1 vanilla bean scraped
- ¼ cup agave or honey
- Place chia seeds in a large bowl and set aside.
- Add the remaining ingredients to a blender, food processor or Vitamix. Puree until smooth.
- Pour pureed mixture over chia seeds and whisk.
- Let set for 10 minutes.
- Whisk again and then pour into 6 separate ramekins or storage vessels.
- Refrigerate a few hours until firm.
