Buffalo Chicken in a Healthy Beast Bowl – Yeah I think you need this Beast Bowl in your life.
Healthy eating doesn’t mean boring eating. Am I right? I see the confusion in your eyes. If a healthy diet is still boring for you, it means you are doing it wrong. In college, there used to be this wings place that I would go to in San Diego, Wings-N-Things. I worked in National City so I would usually have it for dinner on my break. Hold up, I actually just looked it up right now, and they are still in San Diego. If you have a chance drive over, give them a try and let me know if they are still as fantastic as I remember. Thanks! I used to get the six-piece boneless wings, hot! A side of carrots and celery, plus the blue cheese. Ummmhmmm! That takes me back.

The Buffalo Chicken Beast Bowl. It’s a work of genius.
Later in life, whilst adulting, I starting making my own healthier version of boneless wings.
I would buy boneless chicken tenderloins and season them up with my best guess at how one should season a chicken wing. Over the years and with much experimentation, I have to say; I think I nailed it. I have also made this with shrimp. Buffalo shrimp are mighty fantastic too! If you are pescatarian, then you can eat this bowl. And for my vegan friends, cauliflower is a sure stand-in. This flexibility is why I am in love with the Beast Bowl. You can literally adapt it for anyone. Well, I guess unless you aren’t a fan of hot wings. Nah, that’s ridiculous. Who’s not a fan of hot wings?

I love Buffalo wing sauce. Even typing this I’m salivating thinking about the vinegary pepper sauce. I like it hot – I mean, really hot. I love the way the burn lingers on my lips. A note about blue cheese: We are going to make a dairy-free buffalo ranch dressing with this Beast Bowl. It is up to you if you want to add in the blue cheese. I am a believer in moderation, especially if you are not contending with food allergies. I definitely do dairy in moderation. Adding a tablespoon or two of robust, flavorful blue cheese can really up the flavor profile here. If you aren’t feeling it, then make the buffalo ranch and leave out the cheese. It’ll still be amazing. This Buffalo Chicken Beast Bowl is a fantastic way to get all of your favorite flavors from a huge plate of hot wings into one healthy, veggie-packed bowl. Spicy seasoning blend recipes for buffalo chicken, shrimp, or even cauliflower.
Buffalo Chicken Beast Bowl
- 2 lb boneless chicken breast or thighs
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ¼ tsp cayenne
Creamy Buffalo Ranch Dressing
- 2 egg yolks
- 2 tbsp champagne vinegar
- ½ cup avocado oil
- ½ tsp salt
- ¼ tsp dill
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp paprika
- romaine lettuce
- micro greens
- red onions
- blue cheese
- buffalo wing sauce
- Dice the chicken and sprinkle with the spices.
- Add a few teaspoons of coconut oil to a skillet heated to medium-high.
- Sauté the chicken until it's lightly browned. Then set aside.
- Using a high powered blender or food processor, blend egg and vinegar.
- With the machine still running, add spices.
- Again, with the machine still running, slowly drizzle avocado oil. Blend until mixture is emulsified.
- Pick whatever veggie fixins you would like to add and toss into a bowl.
- Drizzle the veggies with chipotle ranch dressing.
- Top with ⅓ to ½ cup of the chicken.
- Add blue cheese and wing sauce.
